And/or the Thanksgiving Day After sandwich and sweet potato fries at the diner in Putney, VT, that combines most of those things.<BR/>- Mom's vegetarian chili and my own fresh-baked cornbread<BR/>- a BBQ pork sandwich and onion rings from Leonard's in Memphis.<BR/><BR/>It's all what we grow up with, huh? Add onions, carrots, celery, bay leaves (3 or 4), garlic (lots), let it cook for several hours until fragrant. Remove chicken bones and skin, put any meat back in the pot. Add some rutabagas and any other veggies you like, let simmer until veggies are done. Season with salt and pepper to taste. I'll add the dumpling recipe after the beef version.<BR/><BR/>For beef:<BR/>Take a big chuck roast or some meaty soup bones, cover with water. Add garlic, celery, onions, bay leaves and simmer until amazingly fragrant and delicious. Add your favorite veggies, lots of chopped tomatoes (canned are ok), and a head of cabbage cut into big hunks and cook until tender. Salt and pepper to taste.<BR/><BR/>On to the dumplings!<BR/>Take 6 eggs and some milk, salt, and enough flour to make a stiff dough (mixing arm must throb from mixing!). Drop by big spoonfulls into the boiling soup. Cover for 10 minutes. Uncover (ooh and ah and become somewhat alarmed at the dumplings ugly and amazing growth!) Cook for another 10 minutes. Then serve. <BR/><BR/>This recipe is extremely forgiving, hearty, winter only food. I had never made good homemade mashed potatoes until I was pregnant with my first and craved them throughout the entire pregnancy. I perfected my mashed potato skills during that pregnancy, a good thing because #2 came just 8 months later. <BR/><BR/>And I just love a peach cobbler right out of the oven with a tiny bit of milk poured over it or vanilla ice cream. <BR/><BR/>Those have to be my favorites! For a comfort meal, I need Indian Food: Channa Masala, Mattar Panneer, Saag, Naan, etc. I find curries very reassuring somehow, possibly because for the time we lived in the UK, it was nearly the only reliably good source of vegetarian food outside of our house. But for a comfort snack, the main ingredient has to be peanut butter, and even better if it is mixed with honey.
