I'd never heard of such a thing, and then yesterday I saw a recipe for making eggs the same way.<br /><br />As for ideas, are you happy with the texture of the muffin? Just flax meal (without any flour) isn't going to give you the same texture as a 'regular' muffin. You could try adding a little whole wheat flour or even some oat or wheat bran. <br /><br />Flavor wise, zucchini would probably taste good and add moisture - as would shredded carrot. Applesauce is used a lot in low fat baking for flavor and moisture. Or you might add a little more oil.<br /><br />You have me intrigued with this idea, especially for days when I don't have any bran muffins in the freezer and want a quick and healthy breakfast or snack. I'd love to see what you could do with the recipe.<br /><br />1/4 cup flaxseed meal<br />1/4 tsp baking powder<br />1 tsp cinnamon (yes, a LOT)<br />1 egg<br />1 tsp olive oil<br />1 tsp lemon juice<br /><br />Mix it all in a coffee cup and put in the microwave for 1 minute.<br /><br />I love this because I don't end up with a dozen muffins staring me in the face. I've tried adding a few walnuts and a few blueberries. What do you think?
