I haven't had good luck freezing dough, so I usually just bake all three loaves and then freeze one or two. I do know it will probably take at least a few hours to defrost completely, and once the dough is room temperature, it will then need more time to rise (proof) before going into the oven. The best bread ever. Next time I will use milk just to see how it tastes.<br /><br />My question is about rolls - can I make the dough up to the point of shaping it into rolls, nestle them into a large pan, and refrigerate for ~20 hours before baking them? I haven't baked bread in a Pullman loaf pan before (though I'm lusting after one :) but I think this dough would probably work fine as is. There may be some guidelines regarding how much dough you can put in the pan, since the space for it to rise is limited - you might try Googling it. Baking time may need to be adjusted - I would reduce it by 5 or 10 minutes and check to see how it looks at that point. I get it wet an...Yes, a wet towel (not terrycloth). I get it wet and then wring it out so that it is no longer dripping, just damp. The moisture keeps the tops of the loaves from drying out while they're proofing, so that they're able to 'spring' up in the oven. Many recipes have you cover the loaves in plastic wrap, but a damp tea towel works better for me, plus it's better for the environment.
