I got some roasted garlic at a food swap in December. It's been in the freezer until I could figure out what to do with it. This is it. I'm making this on TH for dinner!
ReplyDeleteWe are in for some cold weather next week and this sounds like just the thing to have for supper one night! I have never tried roasting garlic but can imagine how much flavor it adds to this. Thanks for another great recipe! :)
ReplyDeleteOh dear, this looks terrific. As always, your timing Susan is spot on. The weather is gray and cold and I have a stash of beanies and my garlic is beginning to sprout. I am lamenting having left my potato harvest on the screen porch and am loath to admit I let it freeze. I am a California girl who goes barefoot everywhere still, even now here in Connecticut, and guess I never believed it would really get so cold that the potatoes would succumb. Another lesson learned about living in snow country. sob. Am looking forward to your lovely roasted garlic bean delight. Thank you!

ReplyDeleteJust wanted to say I made this soup the weekend after you posted it, and it was easy and delicious and fed the two of us for a few meals. (And we even paired it with some sausage like you suggested.) I agree with the above comments that your timing in posting this recipe was perfect. Thanks for sharing it. I just might try the spinach soup next.
