It's a big dose of happy for the body and mind and even freezes beautifully. The flavor and color from the fresh carrot juice stirred in at the end add a wonderful brightness (we love our powerful little $50 Waring juicer!), but the soup tastes great even without it.

Recipe: Sunburst Carrot Soup with Fresh Ginger, Orange, and Carrot Juice
It's a big dose of happy for the body and mind and even freezes beautifully. The flavor and color from the fresh carrot juice stirred in at the end add a wonderful brightness (we love our powerful little $50 Waring juicer!), but the soup tastes great even without it.
