ReplyDeleteI had cauliflower soup at a function once and everyone thought it was potato at first but there was just "something" that made it different. When we asked, we were all surprised to learn it was cauliflower and amazed at how stinkin' good it was!
My husband is diabetic and has given up a lot of favorite foods. But I use cauliflower to make "cauliflash" potatoes. I add a single potato to my pureed cauliflower and butter and milk then toss in a dash of horseradish to make a really wondeful dish that healthy, too.
