Friday Night Dose of Cute: Listen Up!

Have a great weekend.

Anything interesting on the menu this weekend? I'm hoping to play around with a couple of muffin recipes tomorrow (when I'm not in the kitchen garden sowing seeds for fall greens), and right now there's a big batch of homemade chicken stock cooling on the counter and a giant homemade pizza topped with sliced homegrown tomatoes just about ready to come out of the oven.

There's a hint of autumn in the air, and all I want to do is cook and bake. And eat.

  1. Oh my, LOVE the donkey ears! :)
    We are going to have posole made with goat meat from one of the goat boys and locally grown roasted green chiles! YUM!!

  3. Penne pasta topped with roasted organic cherry tomatoes and onions mixed together with crumbled cherrywood-smoked bacon, and a bunch of freshly-grated Parmesan cheese. Also homemade lemon/orange/vanilla-ade - three lemons, one orange, and a touch of anilla for an amazing and refreshing drink.

  5. I've been experimenting with low-carb flaxseed meal muffins, but I'm not very clever. I'd love to see what you could do with the recipe.

    1/4 cup flaxseed meal
    1/4 tsp baking powder
    1 tsp cinnamon (yes, a LOT)
    1 egg
    1 tsp olive oil
    1 tsp lemon juice

    Mix it all in a coffee cup and put in the microwave for 1 minute.

    I love this because I don't end up with a dozen muffins staring me in the face. I've tried adding a few walnuts and a few blueberries. What do you think? Zucchini maybe?

    I love autumn - probably my favorite season of all! Sounds pretty yummy at your house - I'm in the mood to cook and bake, too. Your pizza is making me drool! YUM!


  7. I just pulled jars of 'Tomato Preserves,' out of their hot water bath and there was nearly a quart that I didn't have enough wide mouth pints for... oh well, no worries... I know it will be enjoyed quickly (especially with the plain scones I also made this morning)!

  8. Love to hear about your muffin adventures. When the weather turns cool - muffins, bread and soup are on my mind! I've got a pot of ribolita simmering on the stove as I write!

    Hi! I've been following your blog for about two years now, and I love it! My goal is to do what you've done--but on a much smaller scale--when I retire in a few years. I've already bought an old 1916 farmhouse on Lookout Mountain in the corners of Alabam, Georgia and Tennessee, just north of where I live.
    I'm a high school Librarian and I would love to use your donkey ears in signage, etc if you would give me permission. I would, of course, site you as my source, and that would also help lead into discussions about blogging, etc.
    Do you mind if I use that image? Either way, I thank you for my vicarious farm visits! Also, the great food and recipes; I'm also an enthusiastic and very good (I'm told) cook.

    What a fun idea to make a muffin in a coffee cup in the microwave. I'd never heard of such a thing, and then yesterday I saw a recipe for making eggs the same way.

    As for ideas, are you happy with the texture of the muffin? Just flax meal (without any flour) isn't going to give you the same texture as a 'regular' muffin. You could try adding a little whole wheat flour or even some oat or wheat bran.

    Flavor wise, zucchini would probably taste good and add moisture - as would shredded carrot. Applesauce is used a lot in low fat baking for flavor and moisture. Or you might add a little more oil.

    You have me intrigued with this idea, especially for days when I don't have any bran muffins in the freezer and want a quick and healthy breakfast or snack. I'll have to try it!
