Fresh Blueberries & Orange Yogurt Cake - A Scrumptious Combination
Back in May I created an easy orange yogurt loaf cake specifically to enjoy with the beautiful ripe strawberries that were in my kitchen garden. I quickly became addicted to both the cake and the combination, but what I didn't realize at the time was that this cake was actually made for blueberries. Oh yes. Oh yum.

© Copyright 2008 FarmgirlFare.com, the award-winning blog where it is indeed possible to polish off an entire gallon of local blueberries (along with a fair amount of orange yogurt cake) by yourself in about a week. Urp. (But think of all those antioxidants!) And one of these days we'll get around to actually baking a blueberry pie instead of just thinking about it. Anybody have a good recipe - or another favorite way to use blueberries?

ReplyDeleteOh yes, it came from friend and I have no idea where she got it. Scatter 2 pints of blueberries in a tart pan lined with a pie crust. Pour over it a cup of sour cream, mixed with an egg, a teaspoon of vanilla and about 1/3 cup of sugar. Bake at 350 until it is done, nice and brown on top and puffy (though it deflates out of the oven).
ReplyDeleteJust last week, we also had an abundance of fresh blueberries (all gone now, of course) and also a few stalks of rhubarb left in the garden. After searching online for a few minutes, I found a few recipes for blueberry rhubarb pie. It was as good as, if not better than, the strawberry version!!
ReplyDeleteI made a lot of Blueberry Galettes this year during blueberry season...just using my favorite pie crust. I threw some blueberries in the middle with a bit of sugar and a few thin pats f butter. They were delicious and easy. Plus, I liked the ratio of pie crust to berries, being a crust fanatic! The other benefit was that in our household of 2, a galette was just the right amount for a quick treat. It was easily finished while the crust was still tender and not soggy.

ReplyDeleteWe have a organic blueberry farm just minutes from are cabin. I picked several quarts of berries to put away for the fall. The cake looks yummy!
ReplyDeleteYummers! Have you tried blueberry clafouti? If you like puddings and custard, that's a great way to go. Blueberry yogurt sundaes with honey? Blueberry shakes? And, of course, blueberry scones. Have recipes on my blog - and one day I'll figure out how to link.....

I went on such a blueberry binge I made a huge pan of blueberry and maple bread pudding every morning for breakfast for two whole weeks. I weaned myself of it for calorie reasons but I still fantasize about it constantly. Though blueberries in the raw are most delicious, in baked goods they are insanely amazing.

Bake sugar cookie dough in ramekins. Cool. Top with lemon curd and then top with blueberries. Fresh sweet whipped cream spiked with vanilla and a little lemon zest makes a great topping.
I've made this all from scratch and I've also cheated with refrigerator dough and bottled lemon curd.
It's so delicious.
I just made this cake yesterday, and oh my goodness! It is delicious with blueberries! It is also scrumptious toasted in the morning with a little cinnamon.

ReplyDeleteoh! this orange cake is fantastic when you add grand marnier to sugar syrup you apply after you have baked the cake.
ReplyDeleteI would love to use blueberries for all sorts of things, but they always end up eaten by my 3 year old before I can bake with them. Sigh...I guess there's worse things in the world for a toddler to beg for than berries!
